Classic Tiramisu Recipe
Ingredients
For the Cream Layer:
- 3 large egg yolks
- 1/2 cup (100g) granulated sugar
- 1 cup (250g) mascarpone cheese, softened
- 3/4 cup (180ml) heavy cream (cold)
- 1 tsp vanilla extract
For the Coffee Soaking:
- 1 cup (240ml) brewed espresso or strong coffee (cooled)
- 2 tbsp coffee liqueur (optional, e.g., Kahlúa or Marsala wine)
For the Layers:
- 20–24 ladyfingers (Savoiardi biscuits)
- Unsweetened cocoa powder, for dusting
- Dark chocolate shavings (optional, for garnish)
Instructions
1. Prepare the Cream Layer:
- In a mixing bowl, whisk the egg yolks and sugar together over a double boiler (or gently heat over low heat) until the sugar dissolves and the mixture is slightly thickened (about 5 minutes). Remove from heat and let cool.
- Add the mascarpone cheese to the cooled egg mixture and mix until smooth.
- In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the mascarpone mixture until smooth and fluffy.
2. Prepare the Coffee Mixture:
- In a shallow dish, mix the cooled espresso with coffee liqueur (if using).
3. Assemble the Tiramisu:
- Quickly dip each ladyfinger into the coffee mixture for about 1 second (do not soak too long, or they will become too soggy).
- Arrange a layer of dipped ladyfingers in a 9×9-inch (23×23 cm) dish or similar-sized container.
- Spread half of the mascarpone cream evenly over the ladyfingers.
- Repeat with another layer of dipped ladyfingers, then spread the remaining mascarpone cream on top.
- Smooth the top and dust with a generous layer of unsweetened cocoa powder.
4. Chill and Serve:
- Cover with plastic wrap and refrigerate for at least 4 hours (or overnight for the best flavor).
- Before serving, dust with extra cocoa powder and garnish with chocolate shavings if desired.
