Dry Ingredients
- 3 cups all-purpose flour (roasted and sifted)
- 1 ½ cups raw almonds (blanched and toasted)
- 1 cup sesame seeds (toasted)
- ½ cup flaxseeds (optional, toasted)
- 1 tbsp anise seeds (toasted and ground)
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
Wet Ingredients
- 1 cup melted butter (or clarified butter)
- 1 cup honey
- ½ cup powdered sugar (optional, for extra sweetness)
Instructions
Step 1: Roast the Flour
- In a large pan, dry-roast the flour over medium-low heat, stirring constantly until golden brown (about 15 minutes).
- Sift the roasted flour to remove lumps and let it cool.
Step 2: Toast the Nuts & Seeds
- Blanch the almonds, then toast them until golden. Once cooled, grind half into a fine powder and keep the other half chopped for texture.
- Toast the sesame seeds and flaxseeds, then grind them finely.
- Toast the anise seeds and grind them into powder.
Step 3: Mix the Dry Ingredients
- In a large mixing bowl, combine:
- Roasted flour
- Ground almonds, sesame, and flaxseeds
- Anise, cinnamon, nutmeg, and salt
Step 4: Add the Wet Ingredients
- Gradually pour in the melted butter and honey, mixing well until everything is well incorporated.
- Adjust sweetness with powdered sugar if needed.
Step 5: Shape & Store
- Serve Sellou in a bowl, pressing it down slightly to form a smooth top.
- Garnish with whole almonds or sesame seeds.
- Store in an airtight container for up to a month.
