Almond Briwats are traditional Moroccan pastries filled with a sweet almond paste, wrapped in crispy phyllo dough, and coated in honey. These golden, crunchy treats are often served during special occasions and pair perfectly with Moroccan mint tea.


Ingredients

For the Almond Filling:

  • 2 cups blanched almonds
  • ½ cup powdered sugar
  • 1 tsp ground cinnamon
  • 1 tbsp orange blossom water
  • 2 tbsp unsalted butter, melted

For the Briwats:

  • 10 sheets phyllo dough (or Moroccan warqa)
  • 4 tbsp unsalted butter, melted (for brushing)
  • 1 cup honey (for coating)
  • 1 tbsp orange blossom water
  • 1 tbsp sesame seeds (for garnish, optional)
  • 1 egg yolk (for sealing)

Instructions

Step 1: Prepare the Almond Filling

  1. In a food processor, blend blanched almonds and powdered sugar until finely ground.
  2. Add cinnamon, orange blossom water, and melted butter. Mix until a smooth paste forms.
  3. Shape the almond paste into small logs, about 2 inches long. Set aside.

Step 2: Assemble the Briwats

  1. Cut the phyllo dough into long strips (about 3 inches wide).
  2. Brush each strip with melted butter.
  3. Place an almond paste log at the bottom of a strip, fold one corner over to form a triangle, and continue folding into a samosa shape.
  4. Seal the edge with egg yolk.

Step 3: Fry & Coat the Briwats

  1. Heat oil in a pan over medium heat and fry the briwats until golden brown and crispy (about 2-3 minutes per side).
  2. In a separate saucepan, warm honey and stir in orange blossom water.
  3. Dip the hot briwats into the honey mixture, coating them evenly.
  4. Transfer to a plate and sprinkle with sesame seeds.
