For the Nuggets:

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tbsp olive oil

For Coating:

  • ½ cup breadcrumbs
  • 2 tbsp parmesan cheese (optional)
  • 1 tbsp olive oil

Instructions

1. Prepare the Vegetables

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Steam or lightly cook the broccoli, carrots, and zucchini until slightly tender.
  3. In a large bowl, combine the cooked vegetables, mashed potatoes, cheese, breadcrumbs, flour, and seasonings.
  4. Mix well until a dough-like consistency forms.

2. Shape the Nuggets

  1. Take a tablespoon of mixture and shape it into small nuggets.
  2. In a separate bowl, mix the breadcrumbs, parmesan (if using), and olive oil for coating.
  3. Roll each nugget in the breadcrumb mixture until evenly coated.
