Ingredients (Makes about 20 nuggets)
For the Nuggets:
- 1 cup broccoli, finely chopped
- 1 cup carrots, grated
- 1 cup zucchini, grated (squeeze out excess water)
- 1 cup potatoes, boiled and mashed
- ½ cup cheddar cheese, shredded (optional)
- ½ cup breadcrumbs
- 2 tbsp all-purpose flour (or chickpea flour for gluten-free)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp olive oil
For Coating:
- ½ cup breadcrumbs
- 2 tbsp parmesan cheese (optional)
- 1 tbsp olive oil
Instructions
1. Prepare the Vegetables
- Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Steam or lightly cook the broccoli, carrots, and zucchini until slightly tender.
- In a large bowl, combine the cooked vegetables, mashed potatoes, cheese, breadcrumbs, flour, and seasonings.
- Mix well until a dough-like consistency forms.
2. Shape the Nuggets
- Take a tablespoon of mixture and shape it into small nuggets.
- In a separate bowl, mix the breadcrumbs, parmesan (if using), and olive oil for coating.
- Roll each nugget in the breadcrumb mixture until evenly coated.
3. Bake to Perfection
- Place nuggets on the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
