Ingredients
For the Panna Cotta:
- 2 cups heavy cream
- 1 cup whole milk
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 ½ tsp unflavored gelatin powder
- 3 tbsp cold water
- 1 ripe banana, mashed
For the Bananas Foster Topping:
- 2 bananas, sliced
- 3 tbsp unsalted butter
- ¼ cup brown sugar
- ½ tsp cinnamon
- ¼ cup dark rum (or substitute with orange juice)
- ½ tsp vanilla extract
Instructions
Step 1: Prepare the Panna Cotta
- In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
- In a saucepan over medium heat, combine heavy cream, milk, and sugar. Stir until the sugar dissolves and the mixture is hot (do not boil).
- Remove from heat and stir in the vanilla extract and mashed banana.
- Add the bloomed gelatin, stirring until fully dissolved.
- Strain the mixture through a fine sieve to remove banana pulp for a smooth texture.
- Pour into ramekins or serving glasses and refrigerate for at least 4 hours, or until set.
Step 2: Make the Bananas Foster Topping
- In a skillet over medium heat, melt butter and stir in brown sugar and cinnamon until bubbly.
- Add the banana slices and cook for 1-2 minutes until softened.
- Carefully pour in rum (if using), tilt the pan slightly, and ignite with a long lighter for a flambé effect (optional). Let the flames subside.
- Stir in vanilla extract and remove from heat.
Step 3: Assemble & Serve
- Once the panna cotta is set, spoon the warm Bananas Foster sauce over the top.
- Serve immediately with a sprinkle of cinnamon or whipped cream if desired.
