Chicken Quesadilla Recipe
Chicken quesadillas are a quick and delicious meal filled with seasoned chicken, melted cheese, and crispy tortillas. Perfect for lunch, dinner, or even a snack!
Ingredients (Serves 4)
For the Filling:
- 2 cups cooked chicken breast, shredded or diced
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 small onion, finely chopped
- ½ cup bell pepper, diced (any color)
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp ground cumin
- ½ tsp chili powder (optional for spice)
- Salt & black pepper to taste
- 2 tbsp butter or olive oil
For Assembling:
- 4 large flour tortillas
- 2 tbsp butter, for cooking
- Sour cream, salsa, or guacamole (for serving)
Instructions
Step 1: Prepare the Filling
- Heat butter or olive oil in a pan over medium heat.
- Add onions and bell peppers, and sauté until soft (about 3 minutes).
- Stir in shredded chicken, garlic powder, paprika, cumin, chili powder, salt, and black pepper. Cook for 2 minutes.
- Remove from heat and set aside.
Step 2: Assemble the Quesadillas
- Lay a flour tortilla on a flat surface.
- Sprinkle a layer of cheddar and mozzarella cheese on half of the tortilla.
- Add a few spoonfuls of the chicken mixture over the cheese.
- Top with more cheese, then fold the tortilla in half.
Step 3: Cook the Quesadillas
- Heat a non-stick pan or skillet over medium heat and add a little butter.
- Place the folded quesadilla in the pan and cook for 2-3 minutes per side, until golden brown and crispy.
- Repeat with the remaining tortillas.
Step 4: Serve & Enjoy
- Cut the quesadillas into wedges and serve hot.
- Pair with sour cream, salsa, or guacamole for dipping.
