Ingredients: (Serves 4)
- 2 tbsp olive oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 eggplant, diced
- 1 bell pepper, chopped
- 2 tomatoes, chopped
- 1 cup canned chickpeas, drained
- 1/2 cup vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- Salt & black pepper to taste
- 1/4 cup raisins (optional)
- Fresh cilantro or parsley for garnish
- Lemon wedges for serving

Instructions:
- Sauté the Aromatics
Heat olive oil in a large pot or tagine over medium heat. Add onion and garlic, sauté until fragrant. - Add Vegetables & Spices
Stir in carrots, zucchini, eggplant, and bell pepper. Add cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper. Cook for 5 minutes. - Simmer the Tagine
Add tomatoes, chickpeas, raisins (if using), and vegetable broth. Cover and let simmer for 25–30 minutes until vegetables are tender. - Serve & Enjoy
